Healthy and filling Breakfast

 

Ingredients & Method 

Soak overnight 2 cups green gram or full green moong overnight along with a handful of love.

Wash in the morning and allow to sprout without water, while keeping moist. Sprouting will depend on the local temperature.

 

Sprouting is optional, but healthier. Alternatively, you can directly drain the dal mixture after soaking for 4 hours.

Grind coarsely with ½ cup soaked rice or rice powder. Let ferment.

Mix in chilies, salt, coriander, ginger paste and whatever you like, maybe some cumin seeds. The batter should be a dropping consistency.

Keep for 5/6 hours, until batter rises.

Put on music for your soul and proceed to make dosas.

Heat tawa or griddle, splash some water over it and immediately pour some batter and spread out. When edges start to rise, put a drop or two of ghee or butter or oil all around and a little bit on top.

When the dosa is cooked, it will automatically come off clean.

Cook on other side till brown.

Serve with coconut chutney

  • 1 Cup Coconut
  • 1-4 Green Chillies, chopped
  • 1/4 Tsp Ginger
  • 1/2 tsp Salt
  • 2 tsp Tamarind Pulp / raw mango / lime juice or all of these to taste
  • 1 tsp Coconut Oil for tempering with mustard seeds, hing, curry leaves, etc

Grind all together to make paste .

Temper before or after grinding. Be creative.

Make them to taste and your individual style.
